Cheat's guacamole

Serves 2

2 ripe avocados
Sea salt
Juice of half a lemon or lime
Glug of olive oil

Peel the avocados (you can tell if they’re ripe by squeezing: they should just give), chop roughly and put them in a deep bowl. Don’t leave them long before adding the other ingredients, or they will blacken in the air. Add a pinch of salt, the lemon juice and olive oil. Mash it up with a fork. That’s it.

Blueberry smoothie

Serves 2

1 medium glass of apple juice
5tbsp natural yoghurt
1 banana
1 medium glass of blueberries
1tsp honey (optional)

Healthy and delicious for breakfast, this has a lovely colour. Put all the ingredients except the honey in a blender and blitz until smooth. You can add a teaspoon of runny honey if you like, for extra sweetness. To make it super-chilled, add two ice cubes or freeze the blueberries beforehand.

Cupcake (Fairy cakes)

Makes about 10

Cupcake cases
125g butter
125g caster sugar
2 medium-sized eggs
125g self-raising flour
1tsp vanilla extract

Preheat the oven to 180C/gas mark 4. Line a cupcake tin with the cupcake cases. Cream the butter and sugar with a wooden spoon until they are smooth and light. Add the eggs one at a time, and beat them into the mixture. Add two tablespoons of flour as you do this to stop the mixture curdling. Add the vanilla extract. Fold in the flour using a metal spoon. With a tablespoon, put a dollop of the mix into each cupcake case, leaving room for it to rise. Bake for 18 to 20 minutes. They are ready when risen, golden and firm. Allow to cool on a wire rack.
